Toccata Blanc is a refined white wine from Côtes de Provence, made from carefully selected Rolle (Vermentino) grapes from the vineyards of La Gordonne. The grapes are harvested at night to optimally preserve freshness and aromatic quality. During production only the first must is selected, after which fermentation takes place under strict temperature control between 16 and 18°C to preserve aromatic finesse. The wine has a clear, pale yellow colour with vibrant green reflections. The nose reveals complex aromas of exotic fruit, citrus such as lime, and subtle notes of honeysuckle. On the palate the wine is fresh and energetic with flavours of grapefruit and white flowers, followed by an elegant and lively finish. This wine pairs excellently with seafood and shellfish.
