
Amuse cone
This recipe comes from Sint-Lucie, the largest watercress company in Belgium.Because the amuse consists of a cone, it immediately looks extra fun!Ingredients
100mlChardonnay vinegar
40gwatercress leaf
1units.itemsEgg
300mlGrape seed oil
2Savora mustard
Tête de Moine cheese
spinach cones
Preparation
- Blend the watercress with the vinegar until smooth.
- Put the egg in a tall measuring jug and add the vinegar, mustard, and oil.
- Place a stick blender (with cover) over the egg and pull the blender up while blending so that a mayonnaise forms.
- Season the mayonnaise with salt.
- Fill the spinach cones with the watercress mayonnaise.
- Shave the Tête de Moine into curls and stick them into the cone.
