Avocado Hummus Spread

The trend on terraces in the Middle East. Delicious, fresh spread for dipping bread and sharing.

Ingredients

200gavocado dices
200gChickpeas
100gTahini
1units.itemslime (the juice)
30gSushi vinegar
70mlwater (1)
sumac
Pomegranate
Salt

40gLemon balm
1lSunflower oil

Preparation

  1. Blend the avocado, chickpeas, tahini, lime juice, sushi vinegar, and water in the Magimix.
  2. Season with salt.
  3. Serve with sumac and pomegranate.
  4. Blanch the lemon balm for about 10 seconds and place in ice water.
  5. Spin the basil at about 70°C in the thermoblender for 4 minutes.
  6. Pour the mixture onto a muslin cloth or coffee filter and leave in the fridge overnight.
