Bruschetta pea

Bruschetta topped with pesto-ricotta and finished with peas and lemon oil.

Ingredients

Bread
Lemon oil
Green pesto/ricotta
1Pack green peas

Preparation

  1. Slice the bread, drizzle with olive oil, and grill until golden brown.
  2. Blanch the peas and immediately cool them in ice water.
  3. Mix the ricotta with the pesto (see basic green pesto recipe below) in a 1:1 ratio and season with salt and pepper.
  4. Top the bruschetta with the pesto-ricotta, finish with peas, and drizzle with lemon oil.
