Bruschetta topped with pesto-ricotta and finished with peas and lemon oil.Ingredients

Green pesto/ricotta
1Pack green peas
Preparation
- Slice the bread, drizzle with olive oil, and grill until golden brown.
- Blanch the peas and immediately cool them in ice water.
- Mix the ricotta with the pesto (see basic green pesto recipe below) in a 1:1 ratio and season with salt and pepper.
- Top the bruschetta with the pesto-ricotta, finish with peas, and drizzle with lemon oil.
