Gambas pil pil & lemon

Juicy prawns are fried in a spicy garlic and olive oil marinade and finished with lemon for a fresh kick.A distinctive dish with Mediterranean flair.

Ingredients

400gOlive oil
100gGarlic puree
20gSmoked paprika powder
10gRed chili pepper
10gProvençal herbs
400gSunflower oil
30gSalt
300gRed onion (chopped)

Lemon
Prawns
Parsley

Preparation

  1. Put all ingredients except the onion in a blender and blend finely.
  2. Place the mixture in a vacuum bag and add the onion.
  3. Cook sous-vide for 1 hour at 60°C.

  1. Cut the lemon into small pieces.
  2. Mix the prawns with the marinade.
  3. Fry them well with the lemon pieces.
  4. Serve in a hot dish.
  5. Grate some lemon zest over and garnish with parsley.
