Pimientos de Padrón

Lightly crispy fried Padrón peppers gain extra depth from smoked salt and paella spices, served with a creamy tomato dip full of basil.Classic Spanish comfort with a fresh twist.

Ingredients

Smoked salt
Paella spices
Padrón peppers

200gCream cheese
10gBasil leaves
10gBasil oil
75gMarinated tomatoes (finely chopped)
4Crème fraîche
Salt
Garlic croutons

Preparation

  1. Fry the peppers in oil at 180°C.
  2. Let them drain well.
  3. Sprinkle with smoked salt mixed with paella spices.

  1. Mix the cream cheese with the crème fraîche.
  2. Add the remaining ingredients (except the garlic croutons) and whip until airy.
  3. Let guests apply the spread to the Padrón peppers themselves.
  4. Serve with crumbled garlic croutons for extra crunch.
