Gold Chocolate & Sweet Pistache soft serve

Creamy soft serve with crunchy pistachio and warm coconut-chocolate sauce that sets into a thin, brittle layer, finished with gold.

Ingredients

15gSugar
10gCoconut oil
50gPistachio nuts

200gDark chocolate
40gCoconut oil

Soft serve
Gold spray

Preparation

  1. Melt the sugar with the coconut oil in a pan.
  2. Add the pistachios and mix well. Do not let them get too dark and turn the heat off or low.
  3. Spread the nuts on a baking tray and bake for about 4 to 5 minutes in a preheated oven at 170 °C.
  4. If desired, briefly bake the nuts again with butter and sugar and optionally add a pinch of salt.

  1. Melt the chocolate with the coconut oil.
  2. Keep warm for service at about 40–45 °C and pour over the soft serve.

  1. Pour the chocolate over the soft serve.
  2. Spray the chocolate with gold spray.
  3. Decorate with the candied pistachios.
