Blueberry Ruby soft serve

Soft, creamy soft serve with fresh blueberry and velvety ruby chocolate for a striking ice creation full of color and contrast.

Ingredients

Ruby chocolate cream

95gCream
30gGlucose
43gSunflower oil
200gRuby chocolate

Preparation

  1. Bring the cream to a boil and add the glucose.
  2. Pour the mixture over the chocolate and stir until smooth, then add the oil. If needed, melt further au bain-marie and stir well.
  3. Keep the mixture at room temperature until service and pipe using a piping bag.

  1. Pipe the soft serve.
  2. Garnish with blueberry powder.
  3. Arrange the ruby chocolate on the soft serve.
  4. Add chocolate decoration as desired.
