200gRuby chocolate
Preparation
- Bring the cream to a boil and add the glucose.
- Pour the mixture over the chocolate and stir until smooth, then add the oil. If needed, melt further au bain-marie and stir well.
- Keep the mixture at room temperature until service and pipe using a piping bag.
- Pipe the soft serve.
- Garnish with blueberry powder.
- Arrange the ruby chocolate on the soft serve.
- Add chocolate decoration as desired.
