Soft serve in gastronomic style: creamy swirled soft ice cream with fresh lemon crème, airy meringue and crunchy nuts.

Preparation

  1. Put the lemon juice, sugar, butter and turmeric in a bowl and heat, stirring, au bain-marie to about 82 °C.
  2. Beat the eggs, add them while stirring and heat again to 82 °C.
  3. Finally, blend the cream smooth with an immersion blender and let it cool.

  1. Pipe the soft ice cream.
  2. Arrange the lemon crème on the ice cream and garnish with the nuts, meringue and violets.
