Preparation
- Put the lemon juice, sugar, butter and turmeric in a bowl and heat, stirring, au bain-marie to about 82 °C.
- Beat the eggs, add them while stirring and heat again to 82 °C.
- Finally, blend the cream smooth with an immersion blender and let it cool.
- Pipe the soft ice cream.
- Arrange the lemon crème on the ice cream and garnish with the nuts, meringue and violets.
