
Apple Pie soft serve
A familiar classic in soft-serve form: creamy swirled soft ice cream combined with crumble, apple in different textures and fresh apple gel.Ingredients

Preparation
- Mix all ingredients into a cohesive cookie dough.
- Bake the cookie for about 16 minutes at 170 °C.
- Let cool completely and crumble the cookie.
- 1. Peel the apple, remove the core and cut into the desired size.
- 2. Mix the sugar, water and lemon juice and bring to a boil.
- 3. Add the apple and cook until the desired tenderness is reached.
- 4. Drain the apple cubes over a sieve and collect the cooking liquid for the gel.
- 5. Pat the apple dry.
- 6. Then dry the apple cubes at about 75 °C in a dehydrator for at least one night, or fry them golden brown in butter in a pan.
- Bring the juice to a boil with the agar and whisk well.
- Pour out and store in the refrigerator.
- Blend the jelly smooth with an immersion blender and transfer to a piping bag.
- Place the cookie crumble and apple gel on the bottom of the plate.
- Pipe the ice cream on top.
- Sprinkle with mint, cookie crumble, dried apple and apple gel.
