
Cheese fondue
A tasty snack in the shape of a peanut. For approximately 55 peanuts.The base for this dish is a cheese fondue of Oudwijker with scamorza (smoked cheese). This is frozen in a mold and coated with cocoa butter.
Tip from the sommelier: Serve a red wine such as Montepulciano with this dish.
Ingredients
1Crème fraîche
silicone peanut mold
250gScamorza
natural purple coloring
Cocoa butter
natural yellow coloring
380mlcheese fondue of fiore and stella cheese
Preparation
- Cut the mozzarella into small cubes.
- Put the mozzarella cubes together with the cheese fondue and crème fraîche in the food processor and blend until smooth.
- Pipe the mixture into the silicone mold, tap out the air, and smooth the surface well.
- Place the mold in the freezer. Melt some cocoa butter with both colorings to achieve a nice light brown color.
- Remove the peanuts from the mold, skewer them on a satay stick, and then dip them frozen into the melted cocoa butter.
- Let them thaw before serving.
