Preparation
- Crunch the garlic croutons.
- Portion the goat cheese to the desired weight, about 65 grams per person.
- Coat the goat cheese in flour, then egg, then the crushed croutons.
- Fry the breaded goat cheese in butter for about 1 minute per side until crispy.
- Mix the olive oil with thyme honey to taste.
- Toss the arugula, mesclun and watercress with the dressing.
- Season with salt and pepper.
- Serve the crispy baked chèvre with the salad.
- Garnish with chopped red onions.
- Serve with extra olive oil and bread.
