Puffed Potato Dubai

Oven-baked potato with Entrecote, crispy truffle kataifi, gold-sprayed cashew nuts and a gold-sprayed flower.

Ingredients

Pre-cooked jacket potatoes

Crème fraîche
Pepper and salt
Beef entrecote

Kataifi dough
Truffle oil
Gold spray

Cashew nuts
Edible flower
Gold spray
Truffle cheese

Preparation

  1. Place the potatoes in a preheated oven at 200°C for 20 minutes.
  2. Remove the potatoes from the oven, cut off the top, and hollow them out.

  1. Cook the entrecote to medium rare and season with salt. Cut into cubes.
  2. Mash the potato filling and mix with the crème fraîche and the entrecote.
  3. Season with pepper and salt.

  1. Let the kataifi dough thaw.
  2. Loosen the dough.
  3. Mix in some truffle oil.
  4. Bake until crispy at 180°C in the oven.
  5. Lightly spray with the gold spray.

  1. Spray the cashew nuts and an edible flower with gold spray.
  2. Spoon the potato filling into the potato.
  3. Grate some truffle cheese over it and place in a preheated oven at 165°C for 8 to 10 minutes.
  4. Garnish with the crispy kataifi, the golden cashew nuts, and the flower.
