Ricotta & raspberry tartlet

Crispy tartlet with fresh ricotta cream, marinated raspberries and vanilla ice cream, finished with amaretti and a touch of raspberry powder.Light dessert with crispy tartlet, soft ricotta cream and fresh raspberries. Served with vanilla ice cream and crunchy amaretti for extra texture.

Ingredients

Fresh raspberries
Fondant
Amaretto amarena cherries
1Tartlet with lid
Raspberry fruit powder
50gCloudy lemonade
Crème de cassis
250gRicotta
Vanilla ice cream
Crunchy amaretti

Preparation

  1. Bake the tartlets for about 8 minutes in an oven at 160°C.
  2. Meanwhile, melt the fondant until spreadable.
  3. Brush the tartlets all around with the melted fondant.
  4. Dust with raspberry powder.
  5. Mix the ricotta with the Cloudy Lemonade until creamy.
  6. Marinate fresh raspberries in a little crème de cassis.
  7. Pipe some ricotta cream into the tartlet shells.
  8. Place an Amarena cherry inside and scoop a ball of vanilla ice cream on top.
  9. Distribute the marinated raspberries over it.
  10. Pipe another dollop of ricotta cream on top. Garnish with some crushed amaretti cookies.
