
Sugar tuile with vanilla
An ultra-thin sugar tuile.Ingredients
250gisomalt (Sosa)
Vanilla powder
Preparation
- Heat 250 grams isomalt over low heat until all air bubbles have disappeared.
- Let cool slightly and then mix in a bit of vanilla powder.
- Pour the mixture thinly onto silicone paper and let it harden completely.
- Grind into a fine powder in a blender or food processor.
- Using a sieve, sprinkle this powder thinly onto a baking mat or silicone paper and melt again at 150°C until the desired tuille is formed.
