
Win-Win Mousse

190gWin-Win White callets
1Fine granulated sugar
225gWhipped cream
120gEgg white
Preparation
- Slowly melt the Win-Win White callets in a bain-marie.
- Weigh the egg whites and whipping cream separately in different bowls.
- Once the Win-Win White is completely melted, remove from the heat.
- Whip the egg whites to soft peaks, add the fine granulated sugar and continue whipping until stiff peaks form.
- Clean the whisks and whip the cream to soft peaks. Do not overwhip; the cream should remain light and smooth.
- Work quickly: pour the melted white callets into the cream and mix well. Immediately add one quarter of the whipped egg whites and stir firmly to loosen the mixture. Then gently fold in the remaining egg whites in 2 to 3 additions, keeping as much air as possible in the mixture.
- Divide the mousse among six glasses and refrigerate for about 1 hour until set.
