Armadillo eggs skewers

A summer in Texas style The minced meat from merguez sausages combined with jalapeño peppers; delicious.

Ingredients

fresh cream cheese
jalapeño peppers
Magic Seasoning
grated cheddar cheese
honey-chipotle barbecue sauce
merguez sausages

Preparation

  1. Cut the tops off the fresh jalapeño peppers.
  2. Mix some fresh cream cheese with grated cheddar cheese.
  3. Season the cream cheese mixture with the Magic Seasoning.
  4. Fill the jalapeños with the cream cheese mixture using a piping bag.
  5. Press the sausage meat out of the merguez sausages and form it around the filled jalapeños to make armadillo eggs.
  6. Cook the armadillo eggs in the oven at 180°C.
  7. After cooking, skewer the armadillo eggs, brush them with honey-chipotle barbecue sauce, and grill on the barbecue.
