Preparation
- Heat the Armagnac in a pan and flambé to evaporate the alcohol.
- Add the prunes and let marinate for at least 12 hours.
- Remove the prunes from the Armagnac and pat them lightly dry.
- Fill the prunes with mango salsa (tip: use a piping bag).
- Wrap each prune in pancetta.
- Fry in the pan until the bacon is crispy and serve immediately.
