Sweet-savory bites of plums filled with mango salsa and wrapped in crispy pancetta, warm and full of flavor.

Ingredients

Mango salsa
Pancetta
Plums
200mlArmagnac

Preparation

  1. Heat the Armagnac in a pan and flambé to evaporate the alcohol.
  2. Add the prunes and let marinate for at least 12 hours.
  3. Remove the prunes from the Armagnac and pat them lightly dry.
  4. Fill the prunes with mango salsa (tip: use a piping bag).
  5. Wrap each prune in pancetta.
  6. Fry in the pan until the bacon is crispy and serve immediately.
