Eggs

Freshly sweet and creamy, served in a crispy tartlet shell.

Ingredients

Pepper and salt
Chives
Ketchup
20gCrème fraîche
50gWhiskey cocktail sauce
Caterer cups
10gGarlic mayonnaise
10Eggs (M)

Preparation

  1. Boil the eggs for 8 minutes until done and cool them in cold water. Peel the eggs and cut them in half.
  2. Remove the yolks and press them through a sieve. Keep the egg whites and rinse them briefly under cold water.
  3. Mix the yolks with the whisky cocktail sauce, garlic mayonnaise, and crème fraîche until smooth.
  4. Finely chop the egg whites and season with salt and freshly ground pepper. Mix in finely chopped chives.
  5. Spoon the egg white mixture into the tartlets. Pipe the yolk cream on top and garnish with a little ketchup.
