Foam of calamansi-lemon

Airy foam with a fresh lemon flavor, sprayable from the siphon. Ideal as a topping for desserts or refreshing amuse-bouches.

Ingredients

40gAlbumin
3gGelespessa
250mlkalamansi lemon juice
250mlsugar syrup/sucre de canne

Preparation

  1. Mix everything well in a measuring jug with an immersion blender, making sure the albumin is fully dissolved.
  2. Transfer to a siphon and charge with 2 cartridges.
  3. Let it 'set' in the fridge before use.
