Sunny Pumpkin

A smooth and lightly spiced pumpkin soup cocktail with carrot juice, coconut milk, ginger, and speculaas spices.The white rum gives a surprising twist, while fresh ginger and cress provide a fresh finish. Ingredients for 10 people.

Ingredients

1coconut milk
1Fresh ginger
25gJamaican white rum
1Carrot juice
5gKnorr Professional Ginger Spice Puree
110gKnorr Professional Pumpkin Cream Soup
1lWater
0.2gSpeculaas spices
0.5tray Vene cress

Preparation

  1. Bring 1 liter of water to a boil and, while stirring, add the weighed soup powder.
  2. Add the carrot juice, coconut milk, ginger, and speculaas spices.
  3. Let the soup simmer gently for 5 minutes.
  4. Pass the soup through a fine sieve.
  5. Season the soup cocktail with white rum.
  6. Serve the Sunny Pumpkin cold or lukewarm in glasses.
  7. Garnish with a thin slice of fresh ginger on the rim of the glass and some cress.
  8. Serving tip: Serve with something crunchy, such as macadamia nuts, or finish the soup with roasted pumpkin seeds.
