Tortilla & Chorizo

Soft potato, spicy chorizo, and pimentón come together under a layer of melted Manchego.A warm Spanish classic in a contemporary version.

Ingredients

Chives
Pimentón (smoked paprika)
Leek oil
Manchego
1Egg
Potato gratin
Chorizo cubes

Preparation

  1. Grease an ovenproof dish with oil.
  2. Spread some potato gratin in the dish.
  3. Beat the egg with pimentón to taste.
  4. Distribute a few chorizo cubes over the potato and pour the beaten egg over it.
  5. Drizzle some leek oil over and grate Manchego on top.
  6. Bake for about 8 to 10 minutes in an oven at 180°C.
  7. Garnish with chives.
