White asparagus with miso butter and sesame

White asparagus with creamy miso butter, finished with sesame and spring onion for a savory and slightly sweet flavor balance.

Ingredients

12White asparagus
80gButter
1Rice vinegar
1Honey
Spring onion
1White miso
Black and white sesame

Preparation

  1. Peel the asparagus and cook them for 8–10 minutes in lightly salted water.
  2. Mix the soft butter with the miso, rice vinegar, and honey.
  3. Heat a pan and briefly fry or grill the asparagus.
  4. Add the miso butter and glaze the asparagus in it.
  5. Divide the asparagus over the plates.
  6. Spoon the miso butter over them.
  7. Sprinkle with sesame and finely chopped spring onion.
