60gCoffee (cold)

Preparation
- Loosen the mascarpone with sugar and salt and add the cold coffee.
- Add the whipped cream and gently whip to the desired thickness. Mix in the raspberry powder.
- Fill the tartelettes and smooth with a palette knife. Grate the chocolate over and lightly dust with raspberry powder using a tea strainer.
- Finish with the flower mix.
