Tartelettes with morel cream and pea
A rich bite where earthy morels and creamy cheese come together with fresh peas.Deep umami and spicy notes are refreshed by green accents and a light touch of tarragon.Ingredients
300gMascarpone
20gSoaked morels
0.5Gelatin sheet
Smoked chicken
100gCrème fraîche
Pea
80gPorcini broth
80gBlack olive paste
Tarragon oil
Mini tart shells
Preparation
- Make the broth and dissolve the gelatin in it. Let cool well.
- Whip the broth with mascarpone, crème fraîche and black olive paste until airy (be careful not to curdle). Season with pepper and salt and transfer to a piping bag.
- Cook the peas, cool them down and mix with tarragon oil to taste.
- Fill the shells with the cream, distribute the peas over them and finish with smoked chicken and black pepper.
