Greek salad tartelettes

A fresh, modern interpretation of the classic Greek salad in a refined tartelette.Creamy feta, fresh cucumber and Mediterranean accents come together in one bite.

Ingredients

5gOregano
220gWhipped cream
1Cucumber
100gMilk
2units.eetlepelsushi vinegar
5gSalt
160gMascarpone
200gFeta
Tomato crumble
2units.eetlepelLemon oil
Olive pieces
Sweet and sour red onion
Basil tartelette

Preparation

  1. Blend the feta with the milk until smooth in a food processor. Add oregano, mascarpone and salt and blend briefly until homogeneous. Fold in the whipped cream and chill for at least an hour.
  2. Then whip to the desired thickness and transfer to a piping bag.
  3. Peel the cucumber, remove the seeds and mix with sushi vinegar and lemon oil. Vacuum to marinate.
  4. Fill the mini basil baskets with the salad and garnish with tomato crumble, sweet and sour red onion and olive pieces.
