Preparation
- Whip the cream with the crème anglaise to the desired thickness and keep chilled.
- Heat lemon juice, sugar, glucose, butter and turmeric while stirring au bain-marie to about 82°C. Add the beaten eggs while stirring and heat again to 82°C. Then blend smooth with a hand blender and let cool.
- Fill the cups with the crème anglaise and finish with the lemon cream. Portion the strawberries (possibly marinated) and garnish the cups. Sprinkle some meringue crumble on top.
