Crème anglaise, lemon and strawberry tartelettes

Fresh tartelettes with creamy crème anglaise, soft lemon notes and juicy strawberries.Sweet and fresh come together with a light crunch of meringue for a playful dessert.

Turmeric
200gLemon juice
300gDebic whipped cream
30gGlucose syrup
120gButter
4Eggs
200gCrème Anglaise
Strawberries
Meringue crumbles
Lemon cup

Preparation

  1. Whip the cream with the crème anglaise to the desired thickness and keep chilled.
  2. Heat lemon juice, sugar, glucose, butter and turmeric while stirring au bain-marie to about 82°C. Add the beaten eggs while stirring and heat again to 82°C. Then blend smooth with a hand blender and let cool.
  3. Fill the cups with the crème anglaise and finish with the lemon cream. Portion the strawberries (possibly marinated) and garnish the cups. Sprinkle some meringue crumble on top.
