Crispy sushi rice with creamy wild garlic cream and tender gravad lax, finished with fresh and subtle garlic notes.Ingredients
1kgSushi rice
sushi vinegar
Salt
1.4lWater
100mlEgg white
20mlsushi vinegar
400mlWild garlic oil
100mlWhole yogurt
500gGravad lax
Preparation
- Rinse the sushi rice well under running water.
- Cook the sushi rice in a rice cooker or large pan for about 15 minutes and let it steam for another 15 minutes.
- Season the rice with sushi vinegar.
- Press the rice into a square container and let it cool completely.
- Turn out the rice and cut it into cubes.
- Fry these until golden brown.
- Mix the yogurt, sushi vinegar, and egg white with a hand blender.
- Gradually add the wild garlic oil until a thick mayonnaise forms.
- Place a slice of gravad lax on the sushi rice and top with wild garlic cream.
