Fish mousse

Light fish mousse in a tartelette.

Ingredients

Chives
500gSmoked salmon
400gQimiQ whip
400gBisque
500gSmoked mackerel
Iris tartelette shells
500gSmoked trout

Preparation

  1. Whip the QimiQ until fluffy.
  2. Blend the smoked fish of your choice with bisque until smooth.
  3. Fold this into the QimiQ.
  4. Let the mousse set in the fridge.
  5. Pipe the fish mousse into the tartelette shells.
  6. Garnish with a piece of smoked fish and finely chopped chives.
