Light fish mousse in a tartelette.Ingredients
Chives
500gSmoked salmon
400gQimiQ whip
400gBisque
500gSmoked mackerel
Iris tartelette shells
500gSmoked trout
Preparation
- Whip the QimiQ until fluffy.
- Blend the smoked fish of your choice with bisque until smooth.
- Fold this into the QimiQ.
- Let the mousse set in the fridge.
- Pipe the fish mousse into the tartelette shells.
- Garnish with a piece of smoked fish and finely chopped chives.
