Preparation
- Melt the butter in a pan.
- Remove the pan from the heat and add the flour.
- Mix well with a spatula.
- Return the pan to the heat and cook the roux briefly without letting it color.
- Let the roux cool.
- Heat the milk.
- Pour the warm milk over the cold roux and mix over low heat until you have a thick béchamel sauce.
- Season with freshly ground pepper.
- Do not thaw the poffertjes, but put them frozen into melted herb butter. This way, they absorb the flavor well as they warm up.
- Place the warm herb butter poffertjes on a platter.
- Spoon the béchamel sauce generously over them.
- Distribute the diced ham over the poffertjes.
- Sprinkle the grated cheddar on top.
- Gratinate in the oven at 170°C or under the salamander.
- Garnish with finely chopped chives.
