Poffertjes croque-style

Poffertjes inspired by the classic croque monsieur.With creamy béchamel sauce, diced ham, and grated cheddar, these savory poffertjes are gratinated into a warm and rich appetizer.

Ingredients

500mlMilk
Pepper
60gFlour
50gSalted butter

Herb butter
Poffertjes
Béchamel sauce
Diced ham
Chives
Grated cheddar

Preparation

  1. Melt the butter in a pan.
  2. Remove the pan from the heat and add the flour.
  3. Mix well with a spatula.
  4. Return the pan to the heat and cook the roux briefly without letting it color.
  5. Let the roux cool.
  6. Heat the milk.
  7. Pour the warm milk over the cold roux and mix over low heat until you have a thick béchamel sauce.
  8. Season with freshly ground pepper.

  1. Do not thaw the poffertjes, but put them frozen into melted herb butter. This way, they absorb the flavor well as they warm up.
  2. Place the warm herb butter poffertjes on a platter.
  3. Spoon the béchamel sauce generously over them.
  4. Distribute the diced ham over the poffertjes.
  5. Sprinkle the grated cheddar on top.
  6. Gratinate in the oven at 170°C or under the salamander.
  7. Garnish with finely chopped chives.
