Mini pancakes with goat cheese

Savoury mini pancakes with soft goat cheese, beetroot, blueberries, honey, lemon thyme and roasted seeds.A surprising combination of creamy, fresh and sweet, ideal as a vegetarian snack or sharing plate.

Ingredients

Lemon thyme
Olive oil
Fresh blueberries
Poffertjes
Honey
Cooked beetroot
Soft goat cheese
Roasted seeds

Preparation

  1. Place the thawed mini pancakes in a bowl.
  2. Crumble the soft goat cheese over the pancakes.
  3. Cut the cooked beetroot into cubes.
  4. Spread the beetroot over the goat cheese.
  5. Sprinkle the fresh blueberries on top.
  6. Drizzle with honey and a little olive oil.
  7. Garnish with stripped lemon thyme.
  8. Place everything in the oven at 130°C until the cheese has melted.
  9. Garnish with roasted seeds.
