Soft goat cheese

Preparation
- Place the thawed mini pancakes in a bowl.
- Crumble the soft goat cheese over the pancakes.
- Cut the cooked beetroot into cubes.
- Spread the beetroot over the goat cheese.
- Sprinkle the fresh blueberries on top.
- Drizzle with honey and a little olive oil.
- Garnish with stripped lemon thyme.
- Place everything in the oven at 130°C until the cheese has melted.
- Garnish with roasted seeds.
