Herb butter
200gBurrata

Preparation
- Do not thaw the poffertjes, but put them frozen into melted herb butter. This way, they absorb the flavor well as they warm up.
- Place the warm herb butter poffertjes on a platter.
- Mix the guacamole and burrata with a hand blender or whisk until smooth.
- Spoon some of the sauce over the poffertjes.
- Distribute the sweet corn and beetroot on top.
- Sprinkle the grated cheddar over it.
- Gratinate in the oven or under the salamander.
- Crumble the Bugles chips on top.
- Garnish with finely chopped chives.
