Mexican-style poffertjes

Savoury poffertjes with guacamole, burrata, sweet corn, beetroot, and cheddar.Topped with crunchy Bugles and chives, this dish gets a Mexican twist. Perfect as a colorful sharing plate or a surprising snack.

Ingredients

Poffertjes
300gGuacamole
Bugles chips
Herb butter
200gBurrata
Grated cheddar
Beetroot
Sweet corn
Chives

Preparation

  1. Do not thaw the poffertjes, but put them frozen into melted herb butter. This way, they absorb the flavor well as they warm up.
  2. Place the warm herb butter poffertjes on a platter.
  3. Mix the guacamole and burrata with a hand blender or whisk until smooth.
  4. Spoon some of the sauce over the poffertjes.
  5. Distribute the sweet corn and beetroot on top.
  6. Sprinkle the grated cheddar over it.
  7. Gratinate in the oven or under the salamander.
  8. Crumble the Bugles chips on top.
  9. Garnish with finely chopped chives.
