Preparation
- Mix Kewpie with Tabasco to taste and put this in a piping bag.
- Make a bath of white ponzu and add the diced salmon.
- Let the salmon marinate (cook) for about 5 minutes.
- Pat the salmon dry and brush with Ama Soyu.
- Briefly torch the salmon with a blowtorch.
- Place the salmon cubes on a wasabi chip.
- Top with the Kewpie wasabi mayonnaise.
- Place a piece of harinori on top.
